Celebrate ‘soft’ opening of The Hungry Lion on February 23

Have you seen a large truck emblazoned with photos of Saint Leo University’s beautiful campus? It’s the latest addition from Dining Services: Saint Leo’s own food truck, The Hungry Lion.

Visit The Hungry Lion at noon, Tuesday, February 23, behind the Student Community Center next to the Bowl, for a special program and ribbon-cutting ceremony as Saint Leo celebrates its new addition.

The Saint Leo community will get to sample some of The Hungry Lion’s menu items and hear what else the food truck will offer. Faculty, staff, and students can enjoy some fun prizes, music, and a performance by the Gold Rush Dancers.

As The Hungry Lion gears up, food will be served at lunch time Tuesdays, Wednesday, and Thursdays. The hope is to also offer late-night dining options. Patrons may use cash or credit cards. The Hungry Lion’s fare will not be included in meal plans.

Some sandwiches on The Hungry Lion menu include some recognizable names as they are named after Saint Leo community members: Abbot Isaac’s Special, the Mac Daddy Hernandez, the (Joseph) Cillo Burger, and Frank’s (Orlando) Tomato Basil.  The Hungry Lion’s operators expect to rotate menu names and items offered depending on where they are asked to station the truck and the nature of the events where the truck will be an added attraction. 

“President [Jeffrey] Senese had the vision that our amazing Dining Services cuisine could be shared with the community at special events, at the Tampa Education Center, and at University Campus to meet the needs of students—late night and close to their residence halls,” said Dr. Jen Shaw, vice president of Student Affairs, about the new food truck. “The Hungry Lion will provide fresh, delicious food ‘on the go’ in a variety of locations both on- and off-campus. Simultaneously, it will give community members a peek at the beautiful Pasco County campus through the pictures on the truck.”
